Ce vin effervescent est élaboré selon des règles très strictes, en utilisant le cépage Merlot et Cabernet Franc. La vendange est opérée manuellement et les raisins sont acheminés à la presse pneumatique à l’aide d’une petite boîte à raisins ajourée. Chaque étape vise à limiter l’oxydation du raisin afin que les arômes restent purs.
Cépages Assemblage : Vinification Merlot et Cabemet Franc Différentes étapes de développement selon la méthode traditionnelle : pressurage, première fermentation, seconde fermentation en bouteille, élevage, criblage, dégorgement et titrage. Pendant 9 mois au moins, les bouteilles sont stockées horizontalement sur les lies. L’élevage peut durer 24 mois selon le produit désiré. Pendant toute la période de vieillissement, le vin acquiert des caractéristiques organoleptiques, par la disparition et le soulèvement des arômes. Notes de dégustation Ce vin est subtilement mousseux et présente une robe rose élégante. Les arômes sont fruités, la bouche est ronde et délicieusement parfumée. Accord mets et vin Ce vin charmera les palais à l’apéritif comme au dessert.
